Chilled Cucumber Soup

  • 1 can condensed cream of potato soup
  • 1 can milk
  • 1 chicken boullion cube
  • 1 3/4 c cucumber, pared, seeded and finely chopped
  • 1 c light cream

Combine all ingredients in a saucepan and heat slowly until very hot and the cucumbers are partially cooked (about 10 minutes). Puree in a blender and refrigerate, covered, until chilled. Before serving, stir in cream.
