Palo Duro Canyon Corn

  • 1 Tbsp olive oil
  • 1 onion, finely minced
  • 2 cups tomato puree
  • 2 Tbsp diced celery
  • 2 Tbsp chili powder
  • 2 Tbsp butter
  • 3 cups uncooked corn kernels
  • 1 tsp salt
  • 1/2 tsp pepper

Preheat oven to 350°F. In a heavy skillet, heat the oil and sauté the onion until golden. Add in the tomato puree, celery, chili powder, butter, corn, salt and pepper. Mix well Pour into a buttered casserole, and bake 30 minutes.
