Bourbon Mashed Sweet Potatoes

Bourbon Mashed Sweet Potatoes
  • 4 cups fresh sweet potatoes, cooked and mashed (about 3 1/2 lbs)
  • 1/3 cup brown sugar (packed)
  • 1/2 tsp Chef Paul Prudhomme's Vegetable Magic
  • 1/4 cup evaporated milk
  • 2 Tbsp butter, melted
  • 1 Tbsp bourbon
  • Salt & fresh cracked pepper to taste

Preheat oven to 350°F.

Place all ingredients in large mixing bowl and blend until creamy. Transfer to a baking dish and bake for 15 minutes at 350°F.
