Bourbon Mashed Sweet Potatoes
- 4 cups fresh sweet potatoes, cooked and mashed (about 3 1/2 lbs)
- 1/3 cup brown sugar (packed)
- 1/2 tsp Chef Paul Prudhomme's Vegetable Magic
- 1/4 cup evaporated milk
- 2 Tbsp butter, melted
- 1 Tbsp bourbon
- Salt & fresh cracked pepper to taste
Preheat oven to 350°F.
Place all ingredients in large mixing bowl and blend until creamy. Transfer to a baking dish and bake for 15 minutes at 350°F.
