Rhubarb Salsa #2

  • 2 cups finely diced rhubarb
  • 1/2 cup sweet red peppers
  • 1/2 cup sweet yellow pappers
  • 1/2 cup cilantro
  • 3 finely chopped green onions
  • 1 or 2 minced chili pepers
  • 1 or 2 Tbsp fresh lime juice
  • brown sugar
  • salt and pepper to taste

Blanch rhubarb in boiling water for 10 seconds. Refresh under cold water. Combine with red peppers, yellow pappers and cilantro. Stir in green onions chili pepers. Stir in lime juice. Add brown sugar, salt and peper to taste. Serve with chicken or fish.
