Turkey Pasta With Cream Sauce
- 1 Tbsp butter
- 1 Tbsp flour
- 3/4 cup heavy cream
- Salt and pepper to taste
- Pinch of nutmeg
- 1 lbs pasta
- 2 cloves garlic minced
- 2 Tbsp olive oil
- 2 zucchini, sliced thin
- 1 lbs cooked turkey, cubed
- Grated Parmesan or Romano cheese
Prepare the roux by heating the butter in a small sauce pan over medium heat. Add the flour and stir until it is light brown. In another pan, heat the cream. When it is hot, add the roux and stir until thickened. Add the seasonings and remove from heat. At this point, cook your pasta according to directions. Sauté the garlic in the oil until light brown. Add the zucchini and turkey and sauté until hot. Add more seasoning, if needed. Toss the turkey and zucchini into cooked hot pasta, and add the cream sauce. Top with grated cheese.
