Oven-Fried Catfish

  • 1 lbs of catfish fillets.
  • 2 Tbsp of lemon juice
  • 2 Tbsp of chicken broth
  • 1/2 cup of dry breadcrumbs
  • 1/4 tsp of salt
  • Pinch of garlic powder
  • Pinch of pepper
  • 2 tsp of vegetable oil

Preheat your oven to 450°F. Spray a baking pan with non-stick cooking spray.

In a shallow dish, combine the lemon juice and chicken broth.

In another shallow dish, combine the breadcrumbs, salt, garlic powder and pepper. Dip the fish fillets in liquid, then dip in the breadcrumbs mixture to coat.

Arrange the coated catfish fillets on the sprayed pan; then drizzle with vegetable oil. Bake for about 10 minutes or until the catfish flakes easily with fork.
