Baked Catfish

  • 2 catfish fillets (7-8 oz each)
  • Salt and pepper, to taste
  • 4 oz of butter
  • 4 oz of dry white wine
  • 1 tablespoon of lemon juice
  • 1 teaspoon of garlic, finely chopped
  • 1 teaspoon of cilantro, chopped
  • Paprika

Season the catfish with the salt and pepper. Place the fish in an oval casserole dish.

In a small sauce pan, melt the butter. Add the wine, lemon juice, garlic and cilantro; simmer for about 2 minutes.

Remove from the heat and spoon over the fish. Sprinkle paprika over the catfish. Bake at 375°F for 10-12 minutes, or until done.
