Apricot Fritters

Ingredients:

  • 6 apricots
  • 1/2 pint syrup
  • Half lemon
  • Frying-batter
  • vegetable shortening
  • Vanillas sauce

Preparation:

Select firm, ripe apricots, or preserved ones can be used, cut them in halves, and take out stones.

Stew them gently in syrup with grated rind of 1/2 lemon.

When they are tender, drain well, and let them cool.

Have ready some frying-batter, dip apricots into it, then fry in plenty of hot vegetable shortening.

When a nice golden color, take them up, drain on paper, dish up on a napkin and serve with vanilla sauce.

Serve with warm custard sauce.

Vanilla Sauce Ingredients:

  • 3 Tbsp butter
  • 3/4 cup sugar
  • 1/2 cup heavy cream
  • pinch salt
  • 1/2 tsp vanilla extract

Preparation:

Utilizing a thick-bottom sauce pan, melt the butter and add the sugar, heavy cream and salt. Bring to a simmer and cook for about 5 minutes. After about 5 minutes, add the vanilla extract and take away from the heat. Serve either warm or cold and pour over your favorite dessert.

This sauce will be very thin while it's hot, however once it cools, it will thicken considerably.
