Chicken Chili

  • 1/2 lbs boneless skinless chicken breasts, cut into 1-inch pieces
  • 3/4 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 2 garlic cloves, minced
  • 1 (15 oz) can garbanzo, white or red kidney beans, drained
  • 1 (14 1/2 oz) can diced tomatoes
  • 1 cup chicken broth
  • 1/2 cup tomato catsup
  • 1 Tbsp chili powder
  • 1/8 tsp crushed red pepper

In medium skillet coated with nonstick cooking spray, cook chicken, onion, pepper and garlic over medium-high heat until chicken is no longer pink, stirring constantly. Add beans, tomatoes, broth, catsup, chili powder and red pepper. Cover; simmer 10 minutes.

Serve with sour cream, shredded cheese, diced onions and tortilla chips.
