Arizona Chicken Chili

  • 1 Tbsp oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
  • 2 Tbsp Santa Fe style spice blend (chili, cumin and garlic)
  • 1 (14 1/2 oz) can diced tomatoes
  • 1 (11 oz) can whole kernel corn
  • 1 (14 1/2 oz) can kidney beans

Heat oil in large skillet. Combine chicken, tomatoes and chili powder in medium saucepan. Cook over medium heat about 5 minutes or until chicken is done and sauce is slightly thickened. Stir in remaining ingredients; simmer, uncovered, 5 to 7 minutes or until heated through. Top with shredded cheddar cheese and sour cream, if desired.
