Sticky Buns (gluten-free) Recipe

  • 1 1/2 cups rice flour
  • 1/2 cup potato starch
  • 1 cup tapioca starch
  • 4 tsp baking powder
  • 1 tsp xantham gum
  • 1 tsp salt
  • 2 Tbsp granulated sugar
  • 4 eggs
  • 2/3 cup oil
  • 1 cup milk
  • 3 Tbsp melted butter
  • 1/2 to 1 cup cinnamon/sugar mixture

Heat oven to 375° F.

Mix dry ingredients well, then and add 4 eggs, oil and milk. Stir well in a large bowl.

Spray a 20-inch long piece of wax paper with Pam. Scoop dough onto wax paper and with wet or oiled hands spread dough into a 10 x 14-inch rectangle. Drizzle melted butter over all and sprinkle generously with cinnamon/sugar.

Lift long side of wax paper and dough will start to roll over. Continue to roll up and slice into 12 pieces. Bake for 18 to 20 minutes.

While warm, drizzle with powdered sugar frosting.
