HoneyBaked Ham-style Stuffed Artichokes

Stuffed Artichokes

Blend together in a mixing bowl:

  • 1 cup (8 ounces) whole milk ricotta cheese
  • 1 egg, lightly beaten
  • 1/4 cup grated Parmesan cheese
  • Salt and freshly ground black pepper
  • 1 cup HoneyBaked Ham cut in strips
  • 2 green onions minced
  • Salt and pepper to taste
  • In a small glass bowl, mix all ingredients together until light and fluffy.


    Artichokes:

    • Preheat the oven to 350º
    • In microwave cook approximately 15 to 20 minutes: 4 artichokes, trimmed and base cut so they will sit flat.


    • Remove the chokes by removing the center leaves and scraping with a large spoon. Place them in a square baking pan.

      Divide and stuff the chokes with the mixture and sprinkle the tops with:

      • 1/4 cup dry bread crumbs
      • 2 tablespoons melted butter

      Add some water to the bottom of the pan and bake for 30 minutes, or until tops are golden brown.
