Apricot Pork Medallions

Apricot Pork Medallions
  • 1 lb. whole pork tenderloin
  • 2 1/2 tablespoons butter
  • 3/4 cup chopped dried apricots
  • 2 green onions, sliced
  • 1/4 teaspoon wine vinegar
  • 3 teaspoon brown sugar
  • Hot pepper sauce to taste

Cut tenderloin crosswise in to one inch pieces then slightly flatten each piece using the heel of your hand.

Over medium heat, melt one tablespoon butter in large skillet. Brown medallions, each side. This should only take about two minutes. Add the remaining ingredients to skillet along with remaining tablespoon of butter. Cover skillet and simmer for 3 to 4 minutes.

Remove medallions to serving plates and spoon sauce over each.

Servings: 4
